Summer recipes
With the start of summer, grilled meals become a favorite here. There is something about the smell of the grill that just says "family time." Whether it's grilled fish, meat, or chicken, along with some charred vegetables, it’s always the best choice for a healthy and delicious meal that doesn't keep you stuck in the kitchen all day.
Grilled Kofta
Today, I’m so happy to share our simple recipe for Grilled Kofta fingers with a very basic seasoning, alongside some Grilled chicken drumstick recipes that have a different, special blend.
Authentic Grilled Kofta: Keep it Simple
When it comes to Summer recipes, I think we sometimes try too hard. For the kofta, I really prefer to avoid too many spices. I want to keep that authentic flavor of the meat without hiding it behind a long list of ingredients.
All you will need is:
● Finely chopped onion.
● A good handful of fresh parsley.
● A little cumin, salt, and just a touch of black pepper.
● A drizzle of olive oil to keep things moist.
The Method: I just shape them into thick fingers. It’s quick, easy, and they look so rustic and lovely on the plate once they get those grill marks.
Grilled Chicken Drumstick Recipe
For the chicken, I like to go a bit bolder with the seasoning. I always make small cuts in the chicken drumsticks. This is my "secret" to ensure it cooks perfectly all the way to the bone and lets that delicious marinade go deep inside.
My special blend:
● One clove of minced garlic.
● Finely chopped parsley.
● A mix of salt, paprika, turmeric (for that beautiful golden color), ginger, and black pepper.
● And of course, a bit of olive oil.
Don’t Forget the Vegetables!
A barbecue isn't complete without the sides. I usually throw some onions and tomatoes on the grill too. I just season them with a little olive oil and salt. They get so sweet and smoky; they are the perfect partner for the grilled meats.
