Moroccan Meatball Tagine (Kefta Tagine Recipe)
Welcome back to my humble kitchen! If you are visiting my blog for the first time, a huge warm welcome to you. I am Nourell, a Moroccan mom sharing my simple daily life, easy recipes from my small kitchen, real motherhood moments, and a bit of self-care along the way.
Today, we are making a dish that holds a very special place in Moroccan homes: Meatball Tagine with Tomato Sauce, or what we locally call Kefta Tagine. It is vibrant, savory, comforting, and most importantly, it does not require you to spend hours standing in the kitchen. This is my ultimate go-to meal on a super busy day when I want something homemade, quick, and nourishing for my family.
If you love warm, traditional flavors, you will adore this dish. I have previously shared other authentic Moroccan tagine ideas on the blog, so make sure to check out the links at the bottom of this page if you want to explore more options.
Now, let us get right into the ingredients and simple step-by-step instructions.
■ Ingredients:
☆For the Meatballs:
* 1 lb ground beef
* 1/2 medium yellow onion, finely grated
* 1/4 cup fresh parsley and cilantro, finely chopped
* 1 tsp paprika
* 1 tsp ground cumin
* 1/2 tsp ground ginger
* 1/2 tsp salt
* 1/4 tsp black pepper
* Pinch of ground cinnamon
☆For the Tomato Sauce:
* 4 medium ripe tomatoes, peeled and grated
* 1 small yellow onion, finely chopped
* 1 clove garlic, minced
* 2 tbsp olive oil
* 1 tbsp tomato paste
* 1 tsp paprika
* 1/2 tsp ground ginger
* Pinch of ground cumin
* 1/2 tsp salt
* 1/4 tsp black pepper
* Fresh parsley and cilantro (for garnish)
■ Instructions
1. Make the Meatballs
In a large bowl, mix the ground beef, grated onion, fresh herbs, and all the meatball spices together until everything is well combined. Roll the mixture gently between your palms to shape small, bite-sized meatballs, then set them aside on a plate.
2. Start the Sauce Base
Place your tagine or a deep skillet over medium heat. Add the olive oil, chopped onion, and minced garlic. Sauté them for a few minutes until soft, sweet, and translucent.
3. Simmer the Tomato Sauce
Stir in the fresh grated tomatoes, tomato paste, paprika, ginger, cumin, salt, and black pepper. Cover the pan and let it simmer for about 5 to 10 minutes until the sauce thickens slightly and smells incredible.
4. Cook the Meatballs
Gently drop the meatballs into the bubbling tomato sauce, making sure they are tucked into the gravy. Cover the tagine, turn the heat down to low, and let it cook gently for about 15 to 20 minutes until the meatballs are tender and completely cooked through.
5. Garnish and Serve
Garnish with plenty of fresh chopped parsley and cilantro before serving. Serve it warm right out of the pot with fresh crusty bread for dipping.
What is in Moroccan Meatballs?
You might wonder what makes Moroccan meatballs unique compared to regular meatballs. The secret lies entirely in the fresh herbs and warm warm spices blended directly into the meat. Instead of using breadcrumbs or eggs as binders, Moroccan kefta relies on finely grated onion, fresh coriander, parsley, cumin, paprika, ginger, and just a subtle pinch of cinnamon. The grated onion keeps the meat tender and juicy, while the cinnamon adds a delicate sweetness that balances the rich savory spices.
Easy Moroccan Meatball Tagine Recipe Tips
One common question I get from readers is whether you need a traditional clay tagine to make this meal. The answer is absolutely not! While a clay pot adds a lovely traditional aesthetic, any deep skillet, heavy pan, or Dutch oven with a lid will do the exact same job.
This recipe is truly foolproof and highly forgiving. You can prepare the meatballs ahead of time and keep them in the fridge, making dinner assembly even faster when your schedule gets chaotic. The rich tomato sauce absorbs all the warm spices, creating a comforting dip that calls for plenty of warm, fresh bread. I guarantee once you try this effortless meal, it will become a regular staple in your weekly rotation.
