​I hope you’re all doing amazing. Today, I’m so excited to share a recipe that is very close to my heart. If you know me, you know I love simple, delicious, and colorful food. If you are a fan of peppers—whether they are red, green, or yellow—then you are going to absolutely love this Roasted Pepper Omelette.

​Why I Love This Roasted Red Pepper Omelette

​As moms, we are always on the hunt for recipes that are quick and easy to make. Let's be real: standing in the kitchen for hours to prepare just one meal is exhausting! I’ve reached a point where I prioritize my energy, so I’m always looking for "no-fuss" meals that are also budget-friendly and, of course, yummy.

​This recipe is inspired by the famous Spanish Tortilla, but with a special "Nouril twist." Instead of the traditional potatoes, we are using roasted peppers to give it a smoky, deep flavor that is just incredible.

​Ingredients You’ll Need

​To make this simple Roasted Pepper Frittata, you will need:

  • 4 Bell Peppers: I love using a mix of colors for that vibrant look.
  • 2 Large Eggs: The base of our omelette.
  • 1 Garlic Clove: Finely minced for a beautiful aroma.
  • Fresh Parsley: A handful to add freshness.
  • Spices: A pinch of salt, cumin, and black pepper to bring out the flavors.

​How to Make the Perfect Roasted Pepper Omelette

​The secret to this dish is in the roasting.

  1. Roast the Peppers: Start by roasting your peppers in the oven (or over charcoal if you want that extra smoky taste) until the skin is charred.
  2. The Plastic Bag Trick: Once they are roasted, place them in a plastic bag for a few minutes. This makes the skin peel off so easily!
  3. Prepare the Egg Mixture: In a bowl, whisk your eggs with the minced garlic, chopped parsley, and all the spices.
  4. Assemble: Cut the peeled peppers into small pieces. In a hot pan with a drizzle of olive oil, sauté the peppers for a minute, then pour the egg mixture over them.
  5. Cook: Cover the pan and let it cook on low heat until it sets perfectly into a beautiful, round Spanish Tortilla with Roasted Red Peppers.

​My Personal Serving Suggestion

​Many people think they don't like the taste of peppers on their own, but I promise, when prepared this way for breakfast or a light dinner, you will change your mind!

​For my lunch, I served this omelette alongside some delicious Garlic and Cilantro Shrimp and my Homemade Tomato Sauce Sardines. The combination of the smoky peppers with the seafood was just perfect. (Let me know in the comments if you want my secret recipe for the homemade sardines!)
