How a Health Scare Made Me Love Liver: My Secret Oven-Roasted Recipe


Hello everyone! Today, I want to talk about something we often forget as mothers: taking care of ourselves too. Sometimes, our bodies have a way of telling us to slow down and pay attention.

​I’ve never been a fan of liver. In fact, I know so many people who can’t stand the taste or texture, no matter how it’s prepared—and I was right there with them! But recently, after feeling quite tired and dealing with some annoying symptoms, my blood tests showed that my iron levels were extremely low. My doctor’s advice was simple but firm: "You must start eating liver".

​Since I didn't want to eat something I hated, I decided to experiment in my kitchen until I found a way to make it truly delicious. I discovered that roasting it in the oven makes it incredibly tender and soft, totally different from the tough, fried versions I was used to.

The Recipe

​I started by cutting the liver into long, thin strips. For the seasoning, I kept it simple and natural:

  • Cumin and Salt.
  • Fresh Parsley.
  • A generous drizzle of Olive Oil

​I also roasted some vegetables on the side, seasoned with garlic, parsley, cilantro, a touch of black pepper, and paprika. Everything was tossed in olive oil and slow-roasted to perfection.

​If you struggle with the taste of liver but need that iron boost, I highly recommend trying this method from my humble kitchen. It’s healthy, moist, and actually a meal I look forward to now!
