●For the Kofta:
I prefer to avoid too many spices to keep the authentic flavor of the meat. You will need:
•Finely chopped onion
•Parsley
•A little cumin, salt, and a little black pepper
•Olive oil
Method: Shape them into thick fingers.
I prepare a different seasoning and make small cuts in the chicken to ensure it cooks well and the flavor goes deep inside:
•One clove of minced garlic
•Finely chopped parsley
•Salt, paprika, turmeric, ginger,
and black pepper
•Olive oil
Pro Tip: It is best to marinate it the night before grilling or at least for several hours.
The Vegetables:
For the onions and tomatoes, season them with olive oil and a little salt.
