Hi everyone, how are you all doing today? I have honestly missed blogging so much, and it feels like it has been forever since we last talked. It has actually been three days since my last post. I decided to take a little break during Mother’s Day and step away from all the housework, the endless cleaning, and the daily chores. This mama really needed some rest and a moment to breathe, and I am so glad I took it. I spent a truly wonderful day with my small family, and it was exactly what I needed to feel like myself again. Now, I am back with renewed energy and a happy heart to start another week with all of you.
Moroccan Zaalouk ingredients
To prepare this authentic recipe at home, you will not need anything complicated. The ingredients are very simple and usually already in your kitchen. Here is exactly what you need to gather:
Two large eggplants: Try to pick the ones that feel light for their size.
Two fresh tomatoes: Ripe ones work best for the sauce.
One or two peppers: You can use sweet bell peppers or hot chili peppers depending on what you like.
2 cloves of garlic: This gives it that amazing aroma.
Olive oil: Use a generous amount for the best texture.
Spices: You will need salt, cumin, and paprika.
For this specific recipe, I feel that a little bit of heat from the chili gives it a very special and deep flavor, but you can always keep it mild if you are cooking for kids.
How to make Moroccan Zaalouk
The best way to prepare this recipe and get that smoky taste is by roasting all the vegetables first. You can do this in the oven or even over the stove flame if you like that extra smoky aroma. For me, I chose to prepare them in the oven this time because it is easier when I have other things to do. I placed all the vegetables together in a baking tray, drizzled them with a bit of olive oil, and left them until they became soft and tender. One of the best things about roasting is that it becomes very easy to remove the skin from the eggplants and peppers once they are cooked.
In a small tajine or a simple frying pan, add two large tablespoons of olive oil. Take the garlic that we roasted in the oven and mash it well until it is smooth, then add the tomatoes after peeling them too. Let this mixture cook on low heat until the tomatoes are soft and have absorbed all the oil and garlic flavor.
Next, add the chopped eggplant that we peeled after roasting. It is so satisfying how the skin just slides off when it is done right. Now, it is time to add the spices: salt, cumin, and paprika. Using a fork, start mashing all the components together right in the pan. Let it cook for just a short time so the flavors can meet each other, and finally, add the roasted peppers and some fresh parsley on top for a beautiful garnish.
How to serve and enjoy your meal
This dish is very versatile and fits so many different meals. It can be served warm, but it actually tastes amazing when it is served cold, especially in the summer. It has a very special character as a side dish for any grilled food or seafood platters. If you decide to make a large amount, you do not have to worry about leftovers at all. You can easily keep it in the fridge inside a glass container, and it will stay fresh and delicious for at least three more days.
I personally served this Zaalouk recipe alongside Moroccan grilled sardines, and oh my, it was the perfect summer meal! It is light, healthy, and does not take a long time to prepare in the kitchen, which is exactly what every busy mom needs. It makes me happy to put something on the table that is both nutritious and full of tradition.
